Couscous Salad Alongside Pomegranate Seeds & Mint


It's Eating the Alphabet challenge time!  This month's letters? ... P, Q, or R.  Oh, wow, in that place were as well as thence many possibilities alongside this missive of the alphabet set.  Despite that, though, it was non difficult for me to take away my dish to portion ... Couscous Salad alongside Pomegranate Seeds & Mint

Ingredients
1 (10 oz.) box plainly couscous
1 T. extra virgin olive oil
1/2 c. pomegranate seeds (approximately 1/2 of a pomegranate)
1/2 c. chopped walnuts
About 1/3 c. chopped fresh mint
About 1/3 c. chopped fresh parsley
ii T. dried currants


Directions
1.  Prepare couscous according to packet directions.  Fluff couscous alongside a fork as well as house inwards a large bowl.  Mix inwards remaining ingredients.

2.  Chill for nearly an threescore minutes prior to serving.

Note:  This is likewise wonderful served immediately, spell still hot, equally a side dish.
