Sweet-&-Spicy Pork Tenderloin Amongst Mango Salsa


For this month's Eating the Alphabet challenge (letters M, N, or O), I chose to portion amongst you lot i of our family's go-to recipes.  This Sweet-&-Spicy Pork Tenderloin amongst Mango Salsa is i of our absolute, absolute, absolute favorites.  Hmmmm ... nosotros similar it together with thus much, perchance it deserves almost 50 absolutes.  But I'll halt at three.  You larn the point.

I had been making the pork tenderloin role of this dish for years ... when my Mom came upward amongst the bright stance of pairing it amongst Mango Salsa.  Brilliant, I say.  Genius!  It's such a wonderful combination.

To larn the sweet-&-spicy flavour combination, the pork tenderloin is marinated inwards a mixture of chocolate-brown sugar, love apple tree paste, cumin, together with chili powder.  This forms a fabulously tasty crust on the pork i time it baked.  Just accept a hold back at that flavorful crust ...


When it comes out of the oven, permit it residue for 10 minutes (or a few more) earlier slicing to allow the juices to distribute throughout the meat (THIS IS IMPORTANT!).  This ensures moist morsels of meat, rather than the tenderloin juices only leaching out all over your cutting board when you lot while it.  You don't desire that.  You desire juicy tenderness.

Sweet-&-Spicy Pork Tenderloin amongst Mango Salsa

Ingredients
Sweet-&-Spicy Pork Tenderloin:
1/4 c. packed chocolate-brown sugar
ii T. apple tree cider vinegar
1 T. love apple tree paste
1 tsp. soil cumin
1 1/2 tsp. chili powder
1/4 tsp. soil dark pepper
1 (1 lb.) pork tenderloin

Mango Salsa:
3 c. cubed peeled ripe mango (about 2-3 mangoes)
1 c. chopped greenish onions
1/2 c. chopped fresh cilantro
3 T. finely chopped seeded jalapeno
1 tsp. sugar
1/2 tsp. salt
1/3 c. fresh lime juice



Directions
Prepare the Mango Salsa:
1.  Combine all mango salsa ingredients inwards a bowl together with toss well.  Cover together with chill for almost thirty minutes earlier serving.

Prepare the Pork Tenderloin:
2.  Combine chocolate-brown sugar, cider vinegar, love apple tree paste, cumin, chili powder, together with dark pepper inwards a shallow dish; mix well.  Add pork together with plow to coat all sides.  Cover together with marinate inwards the fridge for 1 hour.

3.  Line a broiler pan or baking canvass amongst aluminum foil together with spray amongst non-stick cooking spray.  Place pork on the prepared pan together with brush amongst some of the marinade left inwards the dish.  Bake at 450 degrees for 20-35 minutes until the meat registers 160 degrees on a meat thermometer.  (If you lot prefer your pork tenderloin slightly pink, bake until it registers 155 degrees.)

4.  Remove the pork tenderloin from the oven together with permit residue for 10 minutes earlier slicing.  Slice to the thickness of your liking, identify on a platter, together with spoon mango salsa on top.
