H5N1 nice, hearty, belly-warming sort of soup. Like creamy Chicken Corn Chowder. I looooooove chowder. Any kind. But I peculiarly beloved clam chowder together with corn chowder ... similar this one. With my New England roots, that's likely no shocker, right?
Throw a footling fleck of vino into Chicken Corn Chowder together with it gets fifty-fifty better. Wine makes everything improve when you're cooking. Who's amongst me?? Oh, together with sometimes I fifty-fifty position it inwards the food. {juuuuust kidding ... sort of.}
Ingredients
- 5 c. chicken broth
- 2 boneless chicken breasts, diced into pocket-sized pieces
- 2 potatoes, diced
- 3 T. butter
- 1 onion, diced
- 6 T. all-purpose flour
- 1/4 c. dry white wine
- 1 c. light cream or milk
- 2 (16 oz.) cans cream-style corn
- 3 c. frozen corn kernels, thawed
- 1 red bell pepper, finely diced
- 1/4 c. chopped fresh parsley
- salt & pepper, to gustation
- Bring chicken broth to a boil. Add diced chicken together with potatoes; supply to a boil. Reduce estrus together with simmer until chicken is cooked through, almost 10 minutes.
- In a large saucepan or Dutch oven, estrus butter. Add onion together with saute until limp, almost three minutes. Stir inwards flour, whisking for almost 1 minute. Stir inwards wine, cream or milk, chicken broth amongst cooked chicken together with potatoes, cream-style corn, together with corn kernels.
- Bring to a simmer (bubbling but non boiling), stirring frequently. Reduce estrus together with simmer for xv minutes.
- Add diced blood-red pepper, parsley, together with tabular array salt together with pepper. Heat for almost ii minutes.
NOTE: This makes a huge pot of soup! Cut the recipe inwards one-half if you're serving a pocket-sized crew or aren't a large fan of leftovers.
