Easy Mediterranean Chicken Amongst Cous-Cous


This is 1 of those creations born out of necessity.  The necessity to brand something to swallow ... amongst merely what you lot cause got to a greater extent than or less the kitchen.  You know those days.  You idea you lot had something figured out to brand for dinner, together with and therefore detect you're missing a telephone substitution ingredient.  I swear at that spot must hold upward gremlins inward my pantry.  Pesky petty gremlins who accept ingredients when I'm non looking.  Sneaky petty devils.

And therefore this slow Mediterranean Chicken amongst Cous-Cous came to be.  I had thawed out chicken from the freezer, therefore had to purpose it up.  I looked to a greater extent than or less my kitchen to run across what I had, together with went to operate assembling.  Chicken ... onions ... garlic ... olives ... capers ...

And, WOW, did this e'er plough out delicious! I knew it would hold upward edible ... I mean, you lot can't larn besides incorrect amongst the ingredients I works life laying around. But I didn't know it would plough out as tasty equally it did! Easy together with quick too.  As nosotros country at our house, it's a keeper!



Easy Mediterranean Chicken amongst Cous-Cous

Ingredients
Olive oil
iv boneless & skinless chicken pectus halves (whole or cutting into bite-sized chunks)
1 onion, sliced inward circular slices
1 clove garlic, minced
Salt & dark pepper, to taste
H5N1 milk shiver of crushed carmine pepper, to taste
iv T. capers
1 c. olives (a mix of kalamata together with dark-green olives)
1 (15 oz.) tin whole tomatoes
Fresh basil
Prepared cous-cous


Directions
1.  Season chicken pectus halves amongst tabular array salt together with dark pepper.  Heat a pocket-size sum of olive stone oil inward a skillet; brownish chicken in heated oil and together with therefore take chicken from pan.

2.  Heat another pocket-size sum of olive stone oil inward the same skillet.  Add onion slices together with garlic; saute until onions soften a bit, nearly 2-3 minutes.  Add dark pepper, crushed carmine pepper, capers, together with olives.  Break upward tomatoes amongst a fork (or your hands); add together tomatoes, amongst juice, to the pan.  Heat until simmering.

3.  Add browned chicken to the pan.  Simmer browned chicken inward the olive-tomato mixture until cooked through together with tender, nearly 15-20 minutes.

4.  Serve over prepared cous-cous together with travel past times amongst fresh basil.
