Blueberry Gingerbread Streusel Muffins



Mmmmmmmm ... gingerbread.  It's i of my absolute favorite Christmas traditions.  I brand gingerbread cookies every year.  And though nosotros don't create it every year, our menage unit of measurement has lots of fun amongst gingerbread houses, too.

So when I had the chance to participate inwards the 'Twist Up Tradition amongst Blueberries!' recipe challenge, sponsored past times the U.S. Highbush Blueberry Council, I knew exactly what tradition I wanted to 'twist up' ...

Blueberry Gingerbread Streusel Muffins

Ingredients
Muffins:
1 c. butter, softened
1 c. granulated sugar
1 c. molasses
iii eggs
1 c. buttermilk
iii c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 T. soil ginger
1 tsp. soil cinnamon
1/2 tsp. soil nutmeg
Pinch of soil cloves
1 1/2 c. fresh blueberries
1 T. all-purpose flour

Streusel Topping:
ii T. all-purpose flour
1/4 c. granulated sugar
1/2 tsp. soil cinnamon
1 T. butter (use a generous tablespoon of butter)


Directions
For the Streusel Topping:
1.  Combine the ii tablespoons flour, 1/4 loving cup sugar, too 1/2 teaspoon soil cinnamon inwards a small-scale bowl.

2.  Cut inwards the (generous) 1 tablespoon of butter until the mixture is crumbly.  Set aside.



For the Muffins:
1.  With an electrical mixer, crunch the 1 loving cup of butter at medium speed until creamy.  Gradually add together sugar, beating until fluffy.  Add molasses; crunch until blended.  Add eggs, i at a time, beating later each improver until blended.  Add buttermilk too crunch until blended.

2.  In a carve upwards bowl, combine the iii cups of flour, baking soda, salt, ginger, cinnamon, nutmeg, too cloves.  Gradually add together the flour mixture to the moisture mixture, beating on medium-low speed until only combined.

3.  Toss blueberries amongst the remaining 1 tablespoon of flour.  Fold the flour-coated blueberries into the muffin batter.

4.  Spoon batter into lightly greased muffin pans, filling each muffin loving cup 3/4 full.  Sprinkle streusel topping evenly over the tops of the filled muffin cups.

5.  Bake at 350 degrees for twenty minutes.  Let cool inwards the pan for 5-8 minutes; take muffins to a cooling rack.

Makes near thirty muffins.
