Maple-Peanut Breakfast Cookies

Happy twenty-four hours later Easter together with Apr Fool's Day together with Spring Break twenty-four hours {at to the lowest degree for me}, all inwards the same twenty-four hours everyone!  Mark together with I simply got dorsum from spending Easter weekend 'home' alongside our families.  We had a really dainty together with relaxing weekend ... Mark got to pass fourth dimension doing ii of the things he loves best - working alongside our bees together with working alongside his tractor.  I got to create ii of the things I love best - move Mark's assistant apiculturist together with hang out cooking alongside my Mom.  Good times.

And i of the kitchen treats I was spoiled alongside this weekend past times my Mom were these scrumptious Maple-Peanut Breakfast Cookies.  Cookies for breakfast?? ...

... Well, sure! ... when they're chock total of good-for-you-stuff, why not?

And these cookies are indeed chock total of good-for-you-stuff.  And neat maple flavor.  Oh, how I love maple.  A lot of times when yous mix peanut butter together with maple syrup inwards baked goods, the peanut butter season totally takes over, drowning out the maple.  Not inwards these cookies.  Somehow inwards these cookies, both flavors smoothen through inwards a tasty complimenting kinda way.

And since they're non overly sweet, they'd brand a wonderful any-time snack, too.  I don't intend they ask to move relegated to simply breakfast at all.

Now, I simply had to portion that I had a helper during the photograph shoot for these cookies.  Mmm, hmmm ... hither he is! ...

Maple-Peanut Breakfast Cookies

Ingredients
  • 2 T. ground flax seeds
  • 1/4 c. milk
  • 2 c. all-purpose flour (or 1 c. all-purpose flour & 1 c. white whole wheat flour)
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. pure maple syrup (I utilization Vermont Grade B)
  • 1/4 c. canola oil
  • 1/4 c. creamy peanut butter
  • 1/2 tsp. vanilla extract
  • 1 c. honey-roasted peanuts, coarsely chopped
Directions
  1. Line 2 baking sheets alongside parchment paper together with lightly spray parchment paper alongside nonstick cooking spray. Set aside.
  2. In a modest bowl, whisk the reason flax seeds alongside the milk together with allow to correspond v minutes.
  3. In a large bowl, combine the flour, baking soda, together with salt; whisk until good mixed.
  4. In a medium bowl, combine the maple syrup, canola oil, peanut butter, together with vanilla. Stir vigorously until thoroughly blended. Add the flax seed together with milk mixture; stir until good combined.
  5. Pour the moisture mixture into the flour mixture, add together the chopped peanuts, together with mix well.
