I absolutely adore this delicious Roasted Butternut Squash Chili.  With yummy chunks of butternut squash, spicy-sweet flavor, too veggies only, it's a fabulous autumn vegetarian chili-with-a-twist.

But it got me thinking ... what makes a chili a chili?  Have yous always wondered that?

I mean, around are loaded amongst meat.  Some are not.  Some are super spicy, around mildly spicy, too around only totally mild.  Some thick.  Some soupy.  Beans.  No beans.  The variations look endless.

Roasted Butternut Squash Chili

Ingredients
  • 1 small butternut squash, peeled & seeds removed
  • 2 T. olive oil
  • 3/4 tsp. salt
  • 1 large onion, chopped
  • 2 red, orange, or yellowish bell peppers, chopped
  • 2 cloves garlic, minced
  • 2 (14.5 oz.) cans diced tomatoes, undrained
  • 2 T. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1 tsp. granulated sugar
  • 1/2 c. water
  • 1 (15.5 oz.) can dark beans, drained & rinsed
  • 1 (15.5 oz.) can night ruddy kidney beans, drained & rinsed
  • grated cheddar cheese
  • chopped light-green onions or chives
Directions
  1. Heat oven to 400 degrees. Cut crush into 1/2-inch cubes. Place crush cubes on a large rimmed baking sheet; toss amongst 1 tablespoon of the olive crude too 1/4 teaspoon of the salt. Bake for thirty minutes, stirring 1 time amongst a large spatula. Set aside.
  2. Heat remaining 1 tablespoon olive crude inward a large pot. Add onions, peppers, too garlic; laid upward over medium oestrus for 8 minutes, stirring occasionally.
  3. Add tomatoes, remaining 1/2 teaspoon salt, chili powder, cumin, cinnamon, allspice, sugar, too water. Simmer, uncovered, xv minutes, stirring occasionally.
  4. Stir inward cooked crush cubes too beans. Simmer thirty minutes, stirring occasionally.
  5. Top each serving amongst grated cheddar cheese too chopped light-green onions or chives.
